Courgette Fritters


  • 2 Medium Courgettes
  • 1 Red Onion
  • 1 clove Garlic
  • 1 Free Range Egg
  • 1 Tbsp gluten free flour
  • Fresh Herbs


  1. Grate the Courgettes and finely slice the red onion
  2. Chop your herbs, use whichever you wish (mint, coriander, dill, chervil or chives etc.)
  3. Mix together in a large bowl with some crushed garlic, salt & pepper
  4. Add the Free range egg (beaten) and give it all a good mix before adding and stirring in the tablespoon of flour
  5. Heat a frying pan with some coconut oil. Fry the fritter (3-5 per pan) until golden brown

Once done put the fritters on a plate with some kitchen roll to drain off any excess oil
